The rising popularity of bone broth can be attributed to its powerful health and wellness benefits. But, what exactly is this superfood?
Bone broth has been used for thousands of years by cultures around the globe. Since ancient times, people have used meat, bones, vegetables, herbs and spices to create broth and stocks.
Those soups were then used as the nutritious and flavorful foundations for sauces, stews, and basting recipes. They were also consumed as medicinal tonics.
Traditionally, bone broth is made by slow simmering the bones of chicken, beef, or fish for a minimum of 12 hours. Vegetables and seasoning are then added for additional flavor. This simmer extracts amino acids, collagen, and minerals from the bones into the broth. The result is a nutritious soup that is also high in protein.
When hot, bone broth looks just like any other basic stock. Once it’s cooled, though, the soup gels and becomes slightly firm. This is due to the presence of naturally occurring gelatin. Bones are comprised primarily of collagen, and collagen is converted into gelatin when cooked. Gelatin makes food solid and jiggly (there’s your science lesson for the day!)
